Countryman Inn Cold Smoker

The Countryman Inn, Shipley has created it’s very own cold smoker, enabling us to produce some extra flavoursome dishes for all of our customers. We have already been smoking Chicken, Local Cod and Mussels and will be looking into adding more to that in the near future.

The smoking is done by covering smouldering oak chippings with Rosemary twigs inside a cast-iron barrel. This barrel has a vented chimney which forces the ‘cold’ smoke into a separate chamber where the food is kept.  The food is then gently preserved with the aromatic smoke giving it a really distinct flavour.

The Countryman Cold Smoker has enabled us to produce some brilliant new dishes such as smoke seafood risotto and smoked chicken tagine.

With Game season now in full swing, it seems a waste to not take advantage of the range of fantastic game right on the doorstep of The Countryman Inn, Shipley.

The August Bank Holiday is synonymous in this country with getting away for a long weekend, more often that not, dampened by terrible weather, but nonetheless a chance to get away from things. With the recession still hitting us hard, The Countryman Inn, Shipley (near Horsham) is offering a cheap alternative to getting away by hosting a Caribbean Day on Thursday 25th August.

With Rum Cocktails, Limbo Dancing, Calypso Music and a Jamaica Inspired BBQ, you will feel like you are relaxing in the Caribbean without having to make the long journey, or pay the huge expense. Special Curry Nights in February

Starting from Tuesday 1st of February, The Countryman Inn will be holding a Special Curry night every Tuesday in February. We have spent the last few weeks tasting and testing a variety of curry recipes and have created a fantastic selection for our first Curry extravaganza of 2011.

These nights will offer our visitors a fantastic selection of curries to try and will be sampling a different selection each week with tastes from India, Thailand, Malaysia and China.

On offer at the Countryman Shipley will be a Butternut Squash and Chickpea Curry, a Goan Monk-fish Curry, Thai Green Curry, Lamb Rogan Josh and a Malaysia Beef Rendang. All of which are priced at just £10 including fragrant rice, puppodoms, chapati and home-made naan bread.

Also available at The Countryman Pub and priced at only £5 is our Vietnamese Spicy Chicken Salad; shredded chicken served with a mix of fresh coriander, mint and lime. Finish with sliced red chillies and crushed peanuts.

Mixed Bean Taboule, The Countryman, Fine Dining Country Pub, West Sussex

Mixed Bean Tabouleh is a hit with our locals. The recipe originates in the Middle East and is a finely chopped salad flavoured with fragrant spices and mixed with cous-cous. The Countryman version uses home grown spring onion, cucumber and tomato and as well as mixing with a citrus infused cous-cous. We also use a mix of crunchy Thai green beans, soft pinto beans and chick peas to add incredible flavour and texture. Since adding it to the summer menu, it has quickly become one of the top selling lunchtime light bites with many of our regulars who fancy a quick refreshing snack in what is all too often a hectic day.
